Grilled Peach & Burrata Salad
Ingredients:
- Bag of Rocket
- 2 Peaches (sliced)
- 1 ball of Burrata
- 150g Cherry tomatoes
- Olive oil
- Fresh Basil
- Handful Flaked almonds / pine seeds
- 5-6 slices of Prosciutto
- Balsamic glaze (to taste)
- 2 tbsp Honey
Method:
1. On a pan slice and char your peach slices in a little olive oil and after 2 -3 mins each side drizzle over some honey
2. In a separate pan toast your pine nuts or flaked almonds until toasted
3. Assemble your rocket & tomatoes into a bowl and massage with some olive oil
4. Add your grilled peaches on top, followed by your ball of burrata opened and spread in the centre
5. Place your torn prosciutto into bite size chunks around the salad and glaze with your balsamic.
6. Garnish with your toasted pine seeds & fresh basil & serve with some crusty bread!
