Ingredients:
300 grams rolled oats
2 tbsp vegetable/coconut oil
125ml maple syrup
2 tbsp honey
1 tsp vanilla extract
50 g sunflower seeds
4 tbsp sesame seeds
50 g pumpkin seeds
100g flaked almonds
100g dried berries
50g coconut (flaked or desiccated)
Method:
1). Preheat the oven to 180°C (350°F/Gas Mark 4).
2). If using coconut oil, slightly warm to bring to liquid form. Combine all the wet ingredients (oil, maple syrup, honey, vanilla extract) in a large bowl.
3). Add all the oats, nuts and seeds except the dried fruit and coconut. Mix well.
4). Tip the granola onto two baking sheets and spread evenly. Bake for 15 minutes then add the coconut and mix it up.
5). Bake for a further 10 minutes and toss in the fruit while you mix it. Bake for a final 5 minutes.
6). Remove and scrape onto a flat tray to cool.
To serve:
Serve with cold milk or yogurt. You can also add some fresh fruit and a drizzle of honey.
To store (if they last that long):
The granola can be stored in an airtight container for up to a month.
