Carrot Cake Whoopie Cookies
Ingredients:
- 90g of pecans walnuts
- 210g plain flour
- 11g baking powder
- 2g bicarbonate soda
- pinch salt
- 110g coconut
- 110g unsalted butter
- 100g caster sugar
- 50g soft brown sugar
- 2 eggs, lightly beaten
- 2g / ½ tsp vanilla extract
- 2 carrots grated
For the Cream Cheese Icing:
- 110g softened butter
- 110g cream cheese icing
- 375g icing
Instructions:
1. Chop and toast the pecans for 5 minutes at 180°.
2. Place parchment on two baking trays.
3. Mix the flour, baking powder, bicarbonate of soda and salt all together in one bowl, add coconut, mix and set aside.
4. In another bowl beat butter and both sugars together.
5. Once combined add one egg at a time and the vanilla and mix.
6. Add dry mixture to wet mixture and mix.
7. Once mixed, fold in grated carrots and pecans.
8. Scoop mixture onto the baking sheets using a tablespoon.
9. Bake in a preheated oven on 180°c for 10 - 12 minutes.
10. Test the cookie by putting a skewer into it and making sure it comes out clean.
11. Once cooled.
12. Scoop cream cheese icing or vanilla ice cream onto one cookie and sandwich with the other cookie on top.
For the Cream Cheese Icing:
1. Mix the butter, cream cheese icing and icing sugar together until there are no lumps.
