Fresh Howth Crabmeat & Sweetcorn Soup

Fresh Howth Crabmeat & Sweetcorn Soup

(Serves 2)

Ingredients:

  • 200g Fresh picked white crab meat
  • 2 Pints of chicken stock
  • 2 Cloves of garlic finely sliced
  • 1 Half red chilli chopped
  • 2 Tsp cornflour
  • 1 Tsp finely chopped fresh ginger
  • 1 Large spring onion shredded length ways
  • 1 Tbsp soy sauce
  • 1 Egg lightly beaten
  • Salt & white pepper to taste

Method:

1. Put a pot on a medium heat and add the chicken stock.

2. Bring the stock to a gentle simmer and add the sweetcorn, garlic and ginger, and leave to cook for 2 minutes.

3. While your stock is simmering, mix the cornflour with some water to make slurry with the consistency of milk, this will help thicken the soup.

4. Now add the chopped chilli, and season to taste with soy sauce and white pepper.

5. Next add the crab meat and allow to cook for 1 minute.

6. Now take your beaten egg and slowly drizzle it into the soup stirring as you do, this will create lovely ribbons of egg in the soup.

7. Remove from the heat after a further minute, your soup is now ready to serve.

To Serve:

Simply ladle the soup into bowls and garnish with your thinly sliced spring onion. And most importantly, enjoy!
