Vegetable Soup
Servings: 4
Prep Time: 15 minutes
Cook Time: 30–40 minutes
Total Time: ~45–55 minutes
Ingredients:
? 3 medium-sized potatoes, peeled and diced
? 5 medium-sized carrots, peeled and sliced
? 1 medium-sized onion, chopped
? 1 clove of garlic, minced
? 750 ml vegetable stock
? 1 knob of butter (for cooking the onion)
? Salt and pepper, to taste
Optional: fresh herbs (like parsley or thyme) for garnish
Method:
1. Prepare the vegetables:
- Dice the potatoes.
- Slice the carrots.
- Chop the onion and mince the garlic.
- Sauté the aromatics:
- In a large pot, melt the knob of butter over medium heat.
- Add the chopped onion and cook for 3–4 minutes until soft and translucent.
- Add the minced garlic and sauté for another 30 seconds until fragrant.
2. Cook the vegetables:
- Add the potatoes and carrots to the pot.
- Stir to coat with the butter and aromatics for 2–3 minutes.
3. Add the stock:
- Pour in the 750 ml of vegetable stock.
- Stir and bring to a boil.
4. Simmer:
- Once boiling, reduce heat to low and cover.
- Simmer for 25–30 minutes until the vegetables are tender.
5. Season and blend (optional):
- Season with salt and pepper to taste.
- Leave chunky or blend for a smooth texture.
6. Serve:
- Ladle into bowls and garnish with herbs if desired.
