1. In a bowl, mix together 120ml of water and gelatine. Set aside.
2. In a pot, add 375ml of water and sugar. On low heat, stir until the sugar has dissolved. Add in the milk and almond extract. Stir and pour into a container. Wait for it to cool down before putting it in the fridge until set. Approximately 3 to 4 hours.
3. To prepare the fruit, mix together the fruit cocktail, lychee and strawberries.
4. Once the almond jelly is set, cut into cubes and mix with the fruit. Ready to serve.
