Canapés

Cheesy stuffed Mushrooms:

Ingredients:

  • 1 packet of button or chestnut mushrooms (stems removed & diced)
  • ½ an onion diced
  • 2 tbsp garlic olive oil
  • 4 cloves garlic minced
  • Chopped fresh parsley
  • 3 tbsp panko breadcrumbs
  • 80g mature cheddar cheese
  • Salt & pepper

Method:

  • Make sure your mushrooms are clean and remove the stems and set aside so each mushroom has a hole underneath.
  • Drizzle with half the olive oil and place on a baking tray hole facing upwards.
  • Chop the stems with onion, garlic & parsley in the remaining garlic oil and sauté until softened and aromatic.
  • Stir in some grated white cheddar into the stem mixture. Stuff into each mushroom
  • Sprinkle with some panko breadcrumbs and bake at 180 Celsius for 8-10mins or until bubbling & golden.
  • Garnish with some extra parsley and serve

 

Candied Bacon & Brie Bites:

Ingredients:

  • Sheet of puff pastry
  • A glass to cut into rounds
  • Muffin tray
  • Wedge of Brie
  • 100g pancetta
  • 2 heaped tsp cranberry sauce or red onion jam
  • Frylight
  • Rosemary for garnish
  • 1 clove garlic

Method:

  • Using your glass cut out your sheet of pastry into 12 -15 discs (depending on the size of your glass)
  • Spray your muffin tray with some frylight and place your pastry discs into the muffin cases
  • Pop in a little wedge of Brie into the centre
  • Fry your bacon or pancetta pieces until crispy.
  • Grate in a clove of garlic and your favourite Christmas jam/chutney and stir together
  • Add a tsp to the top of your Brie and bake in preheated oven at 180 for 15mins or so
  • Garnish with a sprig of rosemary before serving

 

Salami cups:

Ingredients:

  • 12 slices of salami (plain or spicy)
  • 100g chopped cherry tomatoes
  • 3-5 olives thinly sliced (optional)
  • 1/2 a roasted red pepper
  • 50g mini mozzarella balls sliced
  • Fresh basil
  • Balsamic glaze
  • Pepper

Method:

  • Using a shot glass press your salami into your muffin case and repeat.
  • Bake in preheated oven for about 10-12mins until salami is crispy
  • Chop up all your salad ingredients (except for the basil) and stir together
  • When salami is cooked, take a tbsp of the tomato salad and scoop into the salami cups
  • Drizzle with some balsamic glaze and garish with a sprinkle of fresh basil
