Pulled Gammon Sandwich with Apple and Mustard Slaw with Homemade Stuffing

Ingredients:
500ml of beer?
8 tbsp Dijon mustard
4 fresh rosemary sprigs?
1.5 kg gammon
1/2 tsp coarsely ground pepper?
Fresh crusty rolls?
For the Apple & Mustard Slaw:
1/4 white cabbage head, finely sliced
1 red onion, finely sliced
1 large carrot grated
1 apple, finely sliced
1 tsp Dijon mustard?
5 tbsp mayonnaise
Juice of 1 lemon
Salt and pepper to taste
For the Stuffing?:
100g butter
1 small white onion, finely diced
Pepper
250g breadcrumbs
1 tbsp dried herbs
Instructions:
1). Mix the beer and Dijon mustard together.
2). Place the gammon and the rosemary sprigs in a slow cooker.
3). Season with the ground pepper and put on low for 8 hours or on high for 4-6 hours.
4). For the apple and mustard slaw, mix all ingredients together, massaging through the white cabbage.
5). For the stuffing,?put a pan on medium heat and add the butter and onion.
6). Sweat off until the onion is soft.
7). Add the herbs and breadcrumbs and mix everything together.
8). Remove the gammon from the slow cooker and shred using 2 forks.
9). Cut the crusty rolls in half, add a spoonful of apple and mustard slaw,
10). Add a spoonful of stuffing and finish with the shredded gammon.
