INGREDIENTS:
750g Halloumi cut into thick chunks
For The Marinade:
2 tablespoon olive oil
1 tsp balsamic vinegar
2 tbsp lemon juice
1 tbsp chopped fresh thyme
1 garlic clove crushed
1 tsp fresh chopped mint
Salt and freshly ground black pepper
1 red pepper cut into chunks
2 small red onions, each cut into 8 wedges
2 sweet potatoes, cut into chunks
2 courgettes cut into chunks
Giant couscous salad
Mixed summer leaves
6/8 wooden or metal skewers
METHOD:
1). Make the marinade by combining in a dish your oil, vinegar, lemon juice, garlic, thyme, salt
and pepper.
2). Add in the slices of cheese, turning them once or twice in the mixture before leaving to
marinate at room temperature for one hour.
3). Thread your skewers with the halloumi and vegetable chunks, starting with and finishing
each with a piece of cheese.
4). Place the kebabs on a hot BBQ grill, turning frequently until they are golden brown for about
8-10 minutes.
5). Brush the kebabs lightly with any remaining marinade leftover during cooking, and serve with
a summer salad of mixed leaves and couscous
