Ingredients:
1kg of firm new potatoes (steamed, cooled & quartered)
25g of chopped chives
1 medium chopped white onion
600g of salad mayonnaise
2 tbsp of wholegrain mustard
1 cup of chopped gherkins
10 boiled eggs, quartered
25g of chopped flat leaf parsley
Salt
White Pepper
Cayenne Pepper
Method:
1. Mix the mustard and mayonnaise in a large bowl.
2. Add all the ingredients other than the spices and mix gently until everything is coated.
3. Season with salt and pepper, then mix again gently.
4. Transfer to a serving dish and sprinkle with cayenne pepper for garnish.
5. Finish with a sprig of parsley to serve.
