10). 1 tin traditional tinned corned beef, cut into small pieces
11). 25g Chopped Italian Parsley
12). 1 or 2 chopped red chillies, deseeded (optional)
13). ½ tsp salt
14). ½ tsp paprika
15). Pepper to taste
Instructions:
1). Preheat the oven to 180?/356? and smear butter in a large glass or ceramic oven dish. Place in the fridge to set.
2). In a mixing jug, whisk the eggs and milk until smooth. Now in a large bowl, mix the onions, flour, salt, paprika and baking powder. Now combine with the milk/egg mixture to form a batter
3). Add your cheese, bacon, parsley, spring onion, chillies and corned beef and gently fold into the batter. Check seasoning.
4). Now pour the mixture into your chilled oven dish, top with the extra 1/4 cup cheese and finish with a sprinkle of paprika
5). Bake for 25-30 minutes. Once a skewer comes out clean from the centre, it is cooked. Allow to cool on the stove top for at least 10-15 minutes before serving so it sets well.
6). Serve with crusty bread and a light green salad, or even cold at a picnic. It tastes even better the next day and freezes well too!
