Little Bites Muffins

Ingredients

  • 180 g plain flour (1½ cups)
  • 4 g baking powder (1 teaspoon)
  • 2 g baking soda (½ teaspoon)
  • 1.5 g salt (¼ teaspoon)
  • 310 g yogurt, Greek or regular (1¼ cups)
  • 160 g maple syrup (½ cup)
  • 2 large eggs
  • 76 g unsalted butter, melted and cooled (? cup)
  • 9 g vanilla extract (2 teaspoons)
  • 170 g chocolate chips (1 cup)

Directions

1. Preheat the oven to 190 °C (375 °F). Line a mini muffin tray with paper liners and set aside. If using a silicone tray no liners are needed.

2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt until well combined.

3. In a separate bowl, stir together the yogurt, maple syrup, eggs, melted butter, and vanilla extract until smooth.

4. Combine wet and dry ingredients: gradually add the wet mixture into the dry, mixing until just combined. Do not overmix.

5. Fold in the chocolate chips gently until evenly distributed.

6. Fill muffin tray: use a small spoon or mini ice cream scoop to divide the batter into the muffin liners. Do not overfill.

7. Bake for about 10 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.

8. Allow the muffins to cool completely before serving.
