260g Freshly milled flour (Hard White Wheat or Spelt)
3 large Ripe bananas, mashed
170g Honey (or 160g Maple Syrup)
110g Coconut oil or butter, melted
100g Eggs (2 large)
80g Walnuts (toasted and crushed)
60g Milk of choice
6g Baking soda (1 tsp)
5g Vanilla extract (1 tsp)
3g Ground cinnamon (1 tsp)
3g Fine sea salt (1/2 tsp)
Method
Pre-heat oven to 160°C. Grease and line a 9x5 inch loaf pan.
Toast walnuts in a dry pan over medium heat for 3–5 minutes until fragrant. Let them cool slightly, then crush them into small pieces (using a mortar and pestle or by placing them in a bag and rolling over them with a rolling pin).
In a large bowl, whisk together the melted oil/butter and honey. Add eggs and beat well. Stir in the mashed bananas, milk, and vanilla extract.
Sprinkle the baking soda, cinnamon, and salt over the wet mixture and whisk to combine.
Fold in the freshly milled flour and the crushed walnuts until just combined.
Let the batter sit in the bowl for 10 minutes. This allows the fresh bran to hydrate, ensuring a moist texture.
Pour the batter into the pan. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
I know it's tempting but don’t cut it before it's fully cooled.
