'Little Bites' Muffins
Makes 24-30 bites
INGREDIENTS
· 160g freshly milled flour (or 190g all-purpose flour) [1 1/4 cups / 1 1/2 cups]
· 3/4 tsp baking soda
· 1/4 tsp salt
· 305g yogurt (Greek or regular) [1 1/4 cups]
· 160g maple syrup [1/2 cup]
· 75g unsalted butter, melted and cooled [1/3 cup]
o For the healthier 50/50 split option, use: 38g melted butter + 37g unrefined avocado oil
· 2 large eggs
· 2 tsp vanilla extract
· 170g chocolate chips (or unrefined cacao chunks) [1 cup]
DIRECTIONS
1. Preheat the oven to 190°C (375°F) and line a mini muffin tray with muffin liners or use a silicone tray. Set aside.
2. In a medium bowl, whisk together the freshly milled flour, baking powder, baking soda, and salt until well combined.
3. In a separate medium bowl, stir together the yogurt, maple syrup, eggs, melted butter, and vanilla extract until smooth and fully incorporated. Stir in the chocolate chips.
4. Gradually add the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.
5. Using a small spoon or ice cream scoop, fill each muffin cup in the tray, making sure not to overfill.
6. Bake for 10 minutes, or until the bites are golden brown and a toothpick inserted comes out clean.
7. Let the mini bites cool completely before serving.
