Lemon Scones

Lemon Scones

  • 10 oz of self-raising flour;
  • Teaspoon of sugar (optional);
  • 2/3 oz Stork margarine;
  • One large lemon (or two small lemons)
  • Buttermilk to make soft dough;
  • 1 egg;
  • 4 oz of brown flour to add to above mixture to make brown scones

 

Mix all dry ingredients and then add buttermilk plus beaten egg to make a dough mixture.

Add the grated rind of the lemon

Roll on to floured board and knead with palm of hand.

Cut into 6 to 8 scones with a scone cutter.

Bake in a preheated oven at 200C for about 15 to 18 minutes.

Serve with whipped cream and lemon curd
