My Odds & Ends Stir Fry
This is recipe I cobble together all the time and with different vegetables. But I hate waste so whether it's a brocolli stalk chopped up into match sticks or cauliflower stalk | try to reduce food waste as I go along with my recipes. Peppers, courgettes etc can be used but I would add these near the very end so they don't go too mushy (or dead as I like to call them when they are too soft)!
Ingredients
METHOD:
1. Marinade the thinly sliced chicken thighs in the light soy sauce, sesame oil and cornflour for at least 5 min- this tenderises the meat (you can even do this the night before)
2. Add some veg oil into the pan and put on high heat, and fry off the chicken pieces for a couple of minutes on each side, just browned and just cooked (takes about 5 mins). Then take it out of the pan, don't clean the pan.
3. Now at in your garlic and onions with a pinch of salt (and add little bit more oil if needed) and fry for about 60 seconds and then add a splash of water to help soften the onions.
4. Then add in your carrots and broccoli and stir, then add in your chicken again.
5. Add your tbsp of soy sauce, give that a taste and add a bit more if you want. Add another splash of water and throw in the peas, pop and lid on and allow that to cook for another couple of minutes.
6. Then add a good pinch of white pepper, drizzle sesame oil to finish and spring onions.
Serve with rice or noodles or eat as is.
