Burnt Basque Cheesecake

Burnt Basque Cheesecake

Ingredients:

  • 840g cream cheese
  • 335g caster sugar
  • 1 tbls of tapioca flour
  • 168g cream
  • 6 eggs

Method:

Preheat the oven to 220c . Prepare a 10 inch springform cake ring by lining with parchment paper.

In a large mixing bowl add the cream cheese, tapioca flour and caster sugar. Mix together with a spoon or whisk.

Lightly whisk together the eggs. Add the cream and beaten eggs to the cream cheese. Combine everything together.

Pour the mix into the prepared cake ring.

Bake for 35 mins in the preheated oven

The cheesecake should have a good wobble like jelly with the characteristic burnt top. Chill the cheesecake overnight in a fridge before serving
