Ingredients:
4 salmon portions
4-6 mushrooms-sliced
2 cloves of garlic
1 medium onion-chopped
1 ½ mixed peppers-cut into chunks
1 tin chopped tomatoes
3floz/75ml pouring cream
½ glass white wine
1 teaspoon chili flakes
Seasoning
Instructions:
1). Heat a large pan with a little oil and add in the onions, mushrooms & mixed peppers together with the chopped garlic and fry for a couple of minutes or until the vegetables have begun to soften.
2). Season the mixture now with salt and black pepper.
3). Pour in the chopped tomatoes, wine, cream, & chili flakes at this stage and allow the liquid to come to the boil.
4). Place the salmon portions in the pan and secure with a tight-fitting lid and cook gently for approximately 15-20 minutes.
5). Serve with some chunky bread and a large green salad.
