Layered Pride Rainbow Salad Pots
(Serves 4 people)
Ingredients
- 350g Pasta cooked al Dente
- 300g Tuna drained
- 180g Green Beans cut into small lengths
- 4 Tbsp Good Quality Mayonnaise
- 4 Tbsp Natural Yogurt
- 200g Cherry Tomatoes quartered
- 1 orange pepper cut into cubes
- 120g Red Onion Diced
- 200g Sweetcorn drained
- Fresh Chives snipped
Instructions
1. Cook pasta until it is al dente (2minutes less than it states on the packet )
2. Drain the pasta and run under cold water until cold. Set aside and drain well
3. Next cook the greens by placing them in simmering water for 2 minutes
4. Remove and rinse them under cold water till they are completely cold and the cooking process has stooped
5. Drain well and set aside
6. Mix Tuna with mayonnaise and yogurt and add the fresh snipped chives and combine
7. Tip pasta into a large salad bowl or into 4 salad jars wide neck ones are the best
8. Spoon the Tuna on top of the pasta
9. Add a layer of green beans
10. Followed by a layer of cherry Tomatoes
11. Then a layer of diced Red Onions
12. A layer of diced Peppers and Sweetcorn
13. Cover with lid or cling film and refrigerate until required
