Krissy's Berry Oatmeal Bake

Berry Oatmeal Bake (serves 4-6)
Ingredients:
For the Oatmeal Bake -
1). 2 eggs
2). 180g rolled oats
3). 50g chopped pecans
4). 1 tsp baking powder
5). 320ml milk
6). 220ml maple syrup
7). 40g melted coconut oil or melted butter
8). 1 tsp vanilla extract
9). 500g mixed berries, fresh or frozen
10). Pinch of salt and cinnamon.
For the Granola Topping -
1). 50g rolled oats
2). 50g pecans
3). 25g light muscovado sugar
4). 1 tsp vanilla
5). ½ tsp salt
6). 30g melted coconut oil or butter
Instructions:
1). Preheat oven to 160 degrees Celsius.
2). In a large mixing bowl, combine oats, pecans, baking powder, cinnamon and salt.
3). Add milk, maple syrup, eggs, melted oil (or butter) and vanilla. Mix well.
4). Fold in the berries. Pour the mixture in an ungreased 8” x 8” square pan.
5). For granola topping, combine ingredients in medium-sized bowl and mix well. Top oatmeal with granola mixture in the 8” x 8” pan.
6). Place rack in middle of oven. Bake for 30 minutes. Allow to sit 5 minutes before serving.
If you double this recipe, use a 9” x 13” casserole dish instead, and increase the baking time to 45 minutes.
