Rocky Road
Ingredients:
Instructions:
1. Melt the butter, golden syrup, and chocolate together in a saucepan over low heat. Stir until smooth and fully combined.
2. In a large bowl, mix together the crushed digestive and rich tea biscuits.
3. Stir in the chopped Maltesers and any optional chopped chocolate bars.
4. Pour the melted chocolate mixture over the biscuit mixture. Mix well to ensure everything is coated.
5. Line a tin: Use a lined 8” round or rectangular cake tin or your choice of mould.
6. Add marshmallows at the last minute to avoid them completely melting.
7. Pour and press the mixture into the mould, smoothing it out evenly.
8. Sprinkle marshmallows on top.
9. Refrigerate overnight (or for at least 4–6 hours) until set.
10. Once firm, slice and enjoy!
To Store:
1. Keep in an airtight container in a fridge for up to 1 week.
2. These can also be frozen and will last 3 months in the freezer. Cut into your choice of shape and individually wrap with cling film.
