Oven baked Cod with Basil, Cherry Tomatoes and Baby Potatoes
Ingredients:
- 4 x 200g each cod fillet, skin on
- 300g cherry tomatoes, all cut in half
- 4 garlic cloves, sliced
- 2 shallots, peeled and sliced
- 70g basil
- 1 glass of white wine
- 250g baby potatoes, parboiled for 10 minutes and cut in half
- Oil
- Salt, pepper
Instructions:
1. Start by pre-boiling the baby potatoes. Place them in a pot with water and salt, bring to a simmer, and cook for about 10 minutes.
2. Preheat the oven to 160°C with the fan on.
3. Once the potatoes are cooked, drain and set them aside.
4. Cut the cherry tomatoes in half - some vertically, some horizontally - for a varied appearance.
5. Slice the shallots and garlic and tear the basil leaves.
6. Heat a large, oven-safe pan over medium heat. It should be big enough to fit the 4 portions of cod along with the other ingredients.
7. Drizzle the pan with olive oil, place the cod fillets skin side down, season the fish with a little salt, and cook for about 4 minutes.
8. Add the shallots, garlic, and basil to the pan and cook for 1 minute to let the flavours come together.
9. Add the cherry tomatoes, deglaze with a glass of white wine, add the boiled potatoes, and cover the pan with a lid or foil.
10. Transfer the pan to the oven and bake for about 15 minutes.
11. Check the seasoning and adjust if necessary.
12. Once done, serve the dish in the centre of the table and enjoy.
