Ingredients:
500g lamb mince
2 crushed garlic cloves
1 small red onion finely diced
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
Zest of one lemon
Flat leaf parsley chopped
Fresh mint chopped
1 ripe peach cut into 16 slices
Freshly cracked black pepper
Sea salt
Olive oil for frying
Burger buns
Rocket leaves
Mayonnaise
Tomato chutney
Lime juice
Instructions
1). Mix the lamb mince with garlic, red onion, cumin, coriander, smoked paprika, lemon zest, herbs, salt, and pepper.
2). Shape into 4 patties and chill for 10-15 minutes.
3). Heat a drizzle of olive oil in a pan and cook the burgers for 4-5 minutes per side until golden and cooked through.
4). Reserve any pan juices.
5). Heat grill or griddle over medium-high heat.
6). Spray with cooking spray to reduce sticking.
7). Slice the peach into 16 slices and place slices on the pre-heated grill. Grill, flipping as needed, until starting to get marks and soften - about 2 minutes per side.
8). When done, remove from the grill and toss in a small bowl with chopped mint and lime juice to coat.
9). Toast the buns and top with mayonnaise, and rocket leaves.
10). Top with lamb burger, grilled peaches and tomato chutney.
11). Enjoy served with sweet potato wedges.
