INGREDIENTS 
  • Lamb shoulder 
  • Coarse salt 
  • Rosemary and garlic oil 
To serve: 
  • Fresh bread 
  • Olive oil  
METHOD 
  • Light the fire lights and leave them for around 15 minutes. 
  • Spread the coals out across the top of the grill to even the warmth.  
  • Place the skewers across the grill, ensuring they’re resting away from the flames. 
  • Turn them a couple of times since they cook quickly!  
  • Add some garlic and rosemary oil near the end of cooking and grind some coarse salt for added flavour. 
To serve 
  • Toast a few slices of fresh bread on the grill and drizzle olive oil with a bit of salt.  
  • Roll the skewers over the top of the slice of bread and serve.
