1) Sauté pancetta in a cold pan to release the oil and cook with your diced onion until pancetta is crispy.
2) Add garlic, chilli, harissa, tomato puree, passata, honey, salt & pepper. Simmer this while you cook your gnocchi is heavily salted water.
3) Gnocchi is cooked when the dumplings float to the top of the water. Scoop out your gnocchi and add it to your sauce with a handful of parmesan cheese. Add some of the starchy gnocchi water if you think the dish is looking too dry.
4) Rip up some fresh mozzarella and bake at 190 celsius for 10-15mins until the cheese is melted.
5) Garnish with some fresh basil (or parsley) and serve immediately!
