Chocolate chip cookies are a firm favourite in our house and when we make them they always go down a treat. The beauty of this recipe is you can vary the recipe as much as you like: sometimes I like to add some mixed spice and dried fruit. An ideal lunchbox filler.
Ingredients
175g/6oz butter, softened
175g/6oz demerara sugar
3 eggs
350g/12oz plain flour
1 rounded teaspoon baking powder
110g/4oz mixed chocolate chips (dark and milk)
110g/4oz mixed nuts, such as pistachios, walnuts, shelled hazelnuts and pine nuts
Garnish:
3oz/75g white or dark chocolate-melted
Method
Preheat the oven to 180?C/350?F/Gas mark 4.
Cream the butter and sugar with the vanilla essence (extract) for 4–5 minutes in a large mixing bowl until light and fluffy.
Add the eggs and beat for a few minutes.
Sift the flour with the baking powder.
Add the sifted flour mixture to the butter and egg mixture and beat slowly until the mixture comes together.
Add the chocolate chips and mixed nuts and beat until combined.
Break some of the dough into small balls and place on a lined baking tray.
Bake for 15-18 minutes in the oven.
Allow to cool down on a wire tray.
Once cool, drizzle the cookies with some of the melted chocolate
