Courgette, Mint and Feta Frittata

INGREDIENTS:


6 eggs (free range if possible), beaten together
½ a block of feta cheese, crumbled
1 small handful mint leaves, chopped
1 small onion, diced finely
1 tablespoon good quality Extra Virgin Olive oil
4 baby green and yellow courgettes or 1 medium courgette, sliced thinly
Salt and pepper


METHOD:


1. In medium size bowl or jug, mix together the eggs with salt & pepper.
2. Heat a non-stick frying pan over medium high heat. Add the oil, onions, salt and then the
courgettes slices and fry for a couple of minutes.
3. Pour in the egg mixture and stir gently to make sure the courgette slices are spread around.
4. Place the feta and mint on top.
5. Cook for 4 to 5 minutes, the egg mixture should set and brown on the bottom.
6. Pop a lid on if possible for the last couple of minutes or place under a hot grill to ensure the
top is cooked. Serve immediately
