INGREDIENTS:
175g butter, softened at room temperature (+small amount for greasing)
175g caster sugar (or golden caster sugar, if you can get it) 3 large eggs
140g self-raising flour
250g Marzipan, rolled out
3 Cooking Apples, sliced & peeled
Large handful of sliced Almonds to garnish
METHOD:
1. Preheat the oven to 160C / Fan 140C / Gas 3.
2. Butter and line a loose-bottomed 20cm round cake tin.
3. Put the butter, caster sugar, eggs, and flour into a large bowl.
4. Beat using an electric hand whisk until all the ingredients are well blended.
5. Spread the cake mixture in the lined tin.
6. Place the apples in concentric circles on top.
7. Very lightly press into the cake mixture.
8. Dollop dessert spoonfuls of the remaining cake mixture over the amaretti and raspberries and
spread evenly. Scatter the almonds over the top.
9. Bake for 45-55 minutes, until a skewer inserted into the centre comes out clean.
10. If the cake is getting too dark during the baking process, cover lightly with tinfoil. Serve with
ice-cream or custard.
