Pan Fried Halloumi & Quinoa Salad
Ingredients:
Instructions:
1. Slice your halloumi into thick slices and cook on a dry hot pan for 2-3 minutes each side until there is a nice char on each side.
2. Heat up your microwave rice until hot and break up any lumps
3. Add in your washed rocket, diced onion & tomatoes.
4. To make the dressing, add olive oil, honey, mustard & lemon to a jar with salt & pepper and shake vigorously to combine.
5. Toss your salad to combine all the ingredients. Add your dressing and pan fried halloumi on top.
