1. Grate the courgettes and season lightly with salt. Then set aside in a bowl for 20 minutes. After the 20 minutes, remove the grated courgettes from the bowl, place in a tea towel and squeeze the liquid from the grated courgette.
2. Beat the egg, then add the courgette, carrot, shallot, flour, lemon zest, Parmesan, mint, oregano and a good pinch of sea salt and black pepper. Mix it all together to form a batter and then add the feta.
3. Preheat a non-stick pan with a good drizzle of olive oil. Add a couple of large tablespoons of the batter and brown both sides until golden.
4. To make the Tzatziki mix all the ingredients together and serve with the fritters.
