Ingredients
2 red onions
200g sweet potato
1 carrot
2 cloves of garlic crushed
1 small piece of fresh ginger grated
200g halloumi cheese
3-4 tbsp soy sauce & honey
150g flour
A good handful of fresh coriander chopped finely
A good handful of fresh mint chopped finely
2tsp Ras Al Hanout
2tsp cumin
100ml yoghurt
6 burger buns
Some mango chutney
Lettuce
Sea salt and oil for frying
Method
Start with your box grater and grate the carrot and sweet potato into a bowl. Slice the red onions thinly with a sharp knife and mix them together. Now add in the two spices, flour, garlic, ginger and season with some sea salt. Mix it all together and then heat your frying pan. Form the mixture into patties and fry until golden and crispy on both sides in some oil. Place into the oven at 180C for 10-12mins until cooked through.
Fry the halloumi and finish with a good drizzle of soya sauce and honey.
Make the yoghurt by mixing it with the chopped herbs and some lemon juice.
Toast your burger buns and then assemble with some of the yoghurt, patty, halloumi, mango chutney and lid on. Enjoy.
