San Choi Bao (aka Lettuce Wraps)
These can be made with any type of mince and I chose to make them with Quorn this time. With all the different seasonings the Quorn mince soaks it all up and is a great meat alternative and can be cooked from frozen in minutes which is a real time saver. This dish is packed with flavour and is a great sharing dish!

Method
1. In your wok add in your oil and cook in the garlic and ginger until fragrant (about 2 minutes).
2. Then add in all your veggies – celery, onions, mushrooms, carrots and cook until softened – can take about 10 minutes.
3. Then add in your quorn mince or mince of choice.
4. Now the seasonings – light and dark soy sauce, veggie oyster sauce, Shaoxing wine, sesame oil and fry off for a further 5 minutes. Taste and season accordingly.
5. Garnish with chillis and spring onions and serve on little gem or lettuce leaves.
