San Choi Bao (aka Lettuce Wraps)

San Choi Bao (aka Lettuce Wraps)

These can be made with any type of mince and I chose to make them with Quorn this time. With all the different seasonings the Quorn mince soaks it all up and is a great meat alternative and can be cooked from frozen in minutes which is a real time saver. This dish is packed with flavour and is a great sharing dish!

5 min prep, 20 min cooking

Ingredients:

  • 300g frozen Quorn mince or any other mince (chicken, beef, pork or turkey)
  • 1 tbsp veg oil
  • 1 tbsp garlic minced/grated
  • 1 tbsp ginger minced/grated
  • 1 medium onion diced finely
  • 1 celery stick diced finely
  • 1 medium carrot diced finely
  • 1 handful of mushrooms (or your choice) diced finely
  • 2 tbsp of light soy sauce
  • 1 tbsp of dark soy sauce
  • 1 tbsp of vegetarian oyster sauce (but I used normal oyster sauce as no one in my family is vegetarian)
  • 1 tbsp of Shaoxing wine
  • 1 tsp sesame oil
  • Chilli slices and spring onion sliced for garnish and to add extra flavour
  • Sea salt and white pepper
  • Cornflour paste if required if there is liquid (only if cooking with meat mince)
  • 1 large head of gem lettuce or small iceberg lettuce

 

Method

1. In your wok add in your oil and cook in the garlic and ginger until fragrant (about 2 minutes).

2. Then add in all your veggies – celery, onions, mushrooms, carrots and cook until softened – can take about 10 minutes.

3. Then add in your quorn mince or mince of choice.

4. Now the seasonings – light and dark soy sauce, veggie oyster sauce, Shaoxing wine, sesame oil and fry off for a further 5 minutes. Taste and season accordingly.

5. Garnish with chillis and spring onions and serve on little gem or lettuce leaves.
