Blackened Chicken Salad

Blackened Chicken Salad

A must for your summer bbqs. Flavour packed, juicy Chicken with a delicious shallot vinaigrette. No boring summer salads here!

Recipe serves 6-8

INGREDIENTS

Chicken marinade:

  • 2 Chicken Breast
  • 1 tbsp olive oil
  • 1 tsp pepper
  • 1 tsp onion salt
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1 tsp brown sugar
  • 1 tsp garlic powder

For vinaigrette:

  • 80ml olive oil
  • 2 finely sliced shallots
  • 2 tbsp apple cider vinegar
  • juice 1/2 lemon
  • zest half a lemon
  • 1 tsp honey
  • 1 tsp Dijon mustard

For salad:

  • greens of choice (I used 1 head butterhead lettuce & 1/2 bag of rocket)
  • 1 avocado (diced)
  • 1 roasted pepper (diced from jar)
  • 80g crumbled feta
  • 2 sliced scallions
  • optional Parmesan to finish

METHOD

1. Rub your chicken with all the seasonings & oil on all sides and leave to rest at room temp until needed.

2. For vinaigrette, heat the olive oil and add shallots and cook until a deep golden colour & crispy (about 10mins stirring regularly).

3. Add the remaining ingredients to the shallots & stir together.

4. Cook your chicken to your liking on the bbq or a very hot pan in a little oil. Take off the heat and leave to rest while you assemble your salad.

5. To a large bowl, add your greens and add 2/3 of the dressing and massage into the leaves. Add the remaining feta, avocado & peppers.

6. Thinly slice your chicken and lay on top and spoon over the remaining dressing & some Parmesan cheese.
