Lobster Rolls

INGREDIENTS:

1 Lobster (about 600 gr each)

200 gr Mayo

80 gr Ketchup

Juice of ½ Orange

A dash of Brandy

Basil leaves

Orange Zest

1 small shallot diced

Brioche/Butter rolls

 

INSTRUCTIONS:

 

You are going to need to cook the lobster…if you do not like to do this, you can most likely ask your fishmonger to sell you one that s already cooked.

 

To cook the Lobster, you will need a pot of water large enough to put a lobster in; fill it up with water, bring to the boil and plunge the lobster in for about 7-8 minutes.

Remove from the water and cool it under fresh running water.

As it is cooling down, let’s prep the Mary-Rose sauce; mix together the Mayo, Ketchup, orange juice and Brandy. Mix all.

Once the Lobster is cold enough to handle, let’s start to prep it.

Remove the Claws, snap the tail away from its head; remove the shell from the tail, and chop it up.

Crack the claws open and remove the flesh, chop it up and do the same with the knuckles.

Add the diced shallots, chopped basil, lemon and orange zest and the Mary-Rose sauce….

Put in the fridge for about 2 hours and then serve with the Brioche rolls or Butter rolls.
