Almond Pear Cake

INGREDIENTS:
250g caster sugar
225g softened butter
3 eggs
1/2 teaspoon almond essence
125g gluten-free self-raising flour
75g ground almonds
1 can of poached pears, quartered diagonally
2 tablespoons of flaked almonds
METHOD:
1. Preheat the oven to 180C.
2. Line a round 18 inch tin with grease-proof paper and butter the sides.
3. Cream the sugar and butter together until the mixture becomes fluffy and pale.
4. Add the eggs one by one and whisk after adding each egg.
5. Add the almond essence and fold through the mixture with a spatula
6. Sieve the flour and ground almonds into the mixture and fold through the egg, sugar and butter mixture.
7. Place the mixture into the prepared tin and put the poached pears on top starting from the perimeter of the cake and working inwards.
8. Sprinkle the flaked almonds on top.
9. Place in preheated oven for 25 to 30 mins until cooked through.
10. Serve with a little whipped cream or ice-cream.
