INGREDIENTS:
260 grams self-raising flour
200 grams caster sugar
50 grams cocoa powder
Pinch of salt
100 grams chocolate chips
250ml butter milk
2 tablespoons melted butter
50ml vegetable oil
Zest of half an orange
For The Ganache:
200 grams semi-sweet dark chocolate
300ml double cream
2 tablespoons golden caster sugar
RECIPE:
• Preheat the oven to 200C.
• Line a muffin tin with 12 muffin cases.
• Sieve the self-raising flour, caster sugar, cocoa powder and salt together into a bowl and add the chocolate chips.
• In a jug mix the buttermilk, melted butter, vegetable oil and orange zest together.
• Gently mix the wet ingredients into the dry ingredients with a spatula.
• Divide between the 12 muffin cases and place in the preheated oven for 12-15 minutes dropping the oven temperature to 180C.
• When baked, remove and set aside.
To make the ganache:
• Place dark chocolate in a heatproof bowl.
• Place the double cream and caster sugar in a saucepan and gently heat till just before it comes to the boil.
• Pour the cream/sugar mixture on top of the chocolate and leave for a minute. Mix through with a spatula and drizzle over the muffins.
