Beef Mince & Spinach Cannelloni

Beef Mince & Spinach Cannelloni

INGREDIENTS:

1tbsp. Olive Oil

1 tbsp. Butter

3 cloves Garlic Crushed

1 Medium Onion finely Chopped and softened

1kg Beef Mince (browned, drained and blitzed to a medium grain)

1 tbsp. Thyme

1 tbsp. Oregano

300g Spinach leaf blanched, chopped and drained (press out any remaining liquid)

1/4 Nutmeg grated

165g Cream Cheese   

1 box Cannelloni Pasta Tubes

Paprika           

Salt & Pepper to taste

 

METHOD:

1. Fry the chopped onion in butter until soft & set aside

2. Fry the mince in oil with garlic until well browned. Drain, cool and blitz in food processor

3. Make the tomato sauce, cheese sauce and keep warm (see below)

4. Preheat the oven to 180?C.

 

Construct the Cannelloni as follows:

5. Mix the onion, mince, herbs, cream cheese and spinach in a bowl. Add nutmeg and season

6. Mix thoroughly and transfer to a piping bag.

7. Fill each of the pasta pipes with the mixture.

8. In your baking dish, spread a layer of tomato sauce and a layer of cheese sauce in the bottom

9. Lay the filled pasta tubes on the sauce and fill the dish with them from side to side.

10. Top with the tomato sauce and lastly the cheese sauce

11. Finish with paprika and bake in the preheated oven until golden brown and a knife easily slips through the pasta when inserted into the cooked dish.

12. Remove from the oven, allow to cool slightly and then serve with salad and crusty bread.
