Dublin Coddle
Serves 4
Ingredients
Method
1- In a large pot place water and bring to the boil , add bacon pieces and bacon ribs and cook for approx 10 minutes
2- Remove from heat and strain under cold water
3- Place the bacon pieces and ribs back into pot and turn heat up to medium
4- Next add in the stock , chopped onions , peeled potatoes and herbs
5- Bring pot to boil and then turn down to a simmer
6- Cook until bacon is fork tender approx 1 and half hours , potatoes will soften snd thicken the liquid also
7- Add pork Sausages and cook for a further 20 minutes
8- Add more stock if needed to loosen up the dish 9-Ready to serve with Batch loaf or Freshly Baked Soda bread and Irish butter
