Ingredients
100g soft pitted dates
4 heaped tsp smooth peanut butter
3 tbsp boiling water
1 heaped tbsp of cocoa powder
1 tsp vanilla extract
Approx 100g toasted chopped hazelnuts
1. Put the cocoa powder and the water and dates into the food processor and blitz
2. Then add in the vanilla and peanut butter and whizz until a thick paste that comes together in a ball
3. Using 2 teaspoons take a heaped spoonful of mixture and shape it roughly into a ball shape with the spoons and then place on top of the hazelnuts and roll the date mixture until covered in a ball.
4. Repeat until all the mixture is used up!
Top tips -
1. If the dates are really hard and tough, steep them in boiling water for 5 minutes and drain to soften up (then you don’t need the extra boiling water to blitz
2. You can use crunchy peanut butter if you want
3. There can be keep fresh for up to 5 days in a tupperware box
