Ingredients:
Soda Bread Pizza 300g self-raising flour (Extra for dusting) 1 tsp baking soda (OR if you have soda bread flour use 300g soda bread flour instead of self-raising flour and baking soda)
1/2 tsp salt 250ml buttermilk (Approx.) (OR Whole milk + 2 tsp of lemon juice or distilled vinegar to make buttermilk – the acid creates a curdling action in the milk to produce buttermilk) salt and pepper

Method:
1. Combine the self-raising flour, baking soda (OR just use the soda bread flour), salt in a bowl with a wooden spoon then put most of the buttermilk (or milk and lemon juice/vinegar) into the flour mixture and mix, it should start to come together. You may need more of the buttermilk or less (That is why you don’t to put all of it in at 1 go). The dough should be soft and slightly sticky. Turn out onto a flour work surface and knead very slightly so it comes together into a dough.
2. Cut the dough into 2 even amounts and roll out into flat discs of about 1cm in thickness.
3. Heat up a frying pan (no oil) and make sure you do not have it at its highest heat when you put the discs in otherwise it will burn.
4. It will take about 5 min of each side to cook and go brown. The soda bread will puff up. Then cook the sides as well, by holding it up right and rolling it. Take off heat and leave to cook slightly.
5. Then make the tomato sauce put the chopped-up tomatoes into the frying pan with some oil and a pinch of salt and a splash of water. Then add in the garlic powder, onion powder and basil. Let this cook for a couple of minutes then add more water if it is getting too thick and if the tomatoes have not broken down. Once the sauce has cooked for a good 10 min it can be removed from the heat. If you do not like ‘bits’ in your sauce, then blitz it with a soup hand blender.
6. Slice open the soda bread in half and then decorate with toppings and cheese (put on baking tin). 7. Put under the hottest grill setting until golden and bubbling. Enjoy!
