Spiced Baked Beef Quesadillas
Allow us to transport you to Mexico now with this recipe. This is a delicious recipe to have to hand and all of the ingredients are store room essentials so your shopping list will be minimal.
Ingredients:
8 soft flour tortillas
8oz/225g grated cheddar or mozzarella cheese
12oz/350g minced beef
1 red onion-very finely diced
6 mushrooms-chopped
1 ½ mixed peppers-diced
Seasoning:
3 tablespoons oyster sauce
Pinch curry powder
Method:
Heat a large pan and quickly sauté the onion, mushroom and peppers
Add the beef and cook for 4-5 minutes until cooked, then add in the oyster sauce and curry powder. Allow the mixture to cool down.
Lay 4 flour tortillas out on the work surface and beef mixture on top divide the cheese mixture between them. Place another tortilla wrap on top of the mixture to make a sort of sandwich.
Cut the quesadillas in quarters and refrigerate for a couple of minutes to make sure that they remain firm and not liable to lose their cheesy filling.
Place them on a flat tray, lined with baking parchment and bake in a hot oven (190C/375F/Gas Mark 5) for 8 minutes. Once them come out of the oven, press down and serve immediately.
