SPAGHETTI WITH PRAWNS, COURGETTE AND CHERRY TOMATOES
Ingredients: 5 People
500 gr Spaghetti
300 gr Prawns, raw, no shell
2 Courgette, in ribbons
250 gr Cherry Tomatoes
Basil1
1 Shallot
1 Garlic clove
Olive Oil
Salt
Pepper
White Wine
Instructions:
To start, put on a pot water to boil, lid on; as we wait for the water to boil, you can start by cutting in half the cherry tomatoes, slice the shallots, chop the garlic and cut the prawns in 3 pieces.
In medium pan, over medium heat, add some oil, add the shallots and the courgette.
Cook for about 2 minutes, then add the garlic, basil and prawns; cook a further 3-4 minutes and as the prawns start to turn red, add the cherry tomatoes. Cook about 2 minutes then deglaze with a glass of white wine, add salt and pepper and let cook 5 minutes.
By now the water should be boiling, add salt (add a bit by bit until the water taste like the sea).
Put in the spaghetti, wait a minute until the bottom get soft then with the help of a fork, push them all in the water; Spaghetti will take about 7 minutes to cook, but all brands will have a timing guide, please check it.
Once the Spaghetti are cooked, strain and wash with hot water for 10 seconds; add the spaghetti to the sauce (make sure the heat is on under it) and cook together for about 1 minute.
Serve.
