Smokey 3 Bean Chilli Burrito

This quick and easy Three Bean Chili Burrito recipe is perfect when you want a healthy filling snack in under 30 minutes.
It’s healthy, hearty and perfect for lunch, dinner or meal prepped for those cant be bothered to cook days
My smokey Three Bean Chili burrito is loaded with flavor, protein and fiber , I use butter beans for creaminess and cannellini bean and red kidney beans for that earthy bite.
Smokey 3 bean burrito
Ingredients (makes 4 Burritos)

Olive oil
1 Large red onion diced
4 or more cloves of garlic chopped
1 tbs Balsamic vinegar
1 tsp Smoked paprika
¼ tsp Chipotle paste
A pinch of cinnamon
1 tsp maple syrup
1 tin of red kidney beans rinsed and drained
1 tin of butter beans rinsed and drained
1 tin of cannellini beans rinsed and drained
1 tin chopped tomatoes ( ¼ fill and rinse out tin and add to the pot)
A big handful of Grated cheese of choice
4/6 wraps / fajitas/ tortilla they are all pretty much the same thing
Seasoning to taste

 

Method
In a large pot/pan on a medium heat add a good glug of olive oil
Add your onions and garlic and cook off for a few minutes making sure that we sweat them down rather than fry them. Once they are soft, we can add our balsamic vinegar, smoked paprika, chipotle paste, maple syrup and pinch of cinnamon and reduce down until most of the liquid has evaporated.
Now add your 3 beans and tin of chopped tomatoes and stir , let it gently simmer and cook for about 10 minutes , check the seasoning and if you want add a little more chipotle paste to turn up the heat , once cooked allow it to cool while you go get your wraps.
Once the beans are cooled spread about ¼ cup of the bean mixture across the lower third of each tortilla. Sprinkle with grated cheese and a slice of avocado or spinach
Fold up the burrito by bringing the bottom end over the filling, folding in the sides, and then rolling it up.
Warm a pan/griddle pan and add ,seem side up , your burrito and cook until browned (3 to 4 minutes checking every so often)
then turn over so the seem is down and cook for another 4 minutes and your ready to go
serve with a salsa and creamy guacamole enjoy
