Preheat your oven to 160 Fan / 180 C / 350 F / Gas 4
Brush the dairy free spread around the inside of your baking dish and set aside.
In a bowl or jug whisk together the milk, syrup/sugar, nutmeg and vanilla then pour into your buttered dish.
Sprinkle in the rice and put in the oven for 45 minutes.
Carefully take the dish out of the oven, give it a good stir the rice then put back in the oven for another 45 minutes
When the rice is cooked spoon into serving bowls and top with the warm fruit
For the Baked Spiced Plums
ingredients
6 Plums (halved and remove the stone)
1 tbsp of Castor Sugar
1 tsp Cinnamon
1/4 tsp of Mixed Spice
4-5 Star Anise
A knob of Butter
and little drop of water if you want extra sticky spicy plums
method:
Pop your halved and stoned plums into a buttered dish and sprinkle your spiced sugar mix over the plums (that’s your sugar , cinnamon, mixed spice and star anise) pop in a knob of butter
Add a little water if you wish and pop into the oven at 180 or gas mark 4 for about 2530 mins
Remove from the oven and serve with the rice pudding
