Healthy Granola Bars

We're whipping up some easy bars for a 'New Year New You' homemade snack. Catherine Leyden was on hand to show us how. 

Ingredients


200g Packet Shamrock Dates
125g/4oz Odlums Porridge Oatflakes
100g Packet Shamrock Almonds
2 Tablespoons Rowse Honey
2 Tablespoons Kelkin Smooth Peanut Butter

Method

Put the dates in a food processor and process for about a minute until it forms a dough like consistency (mine came together into a ball)

If liked, you can toast the almonds and oats in a preheated oven 180°C/350°F/Gas 4 for 15 minutes until slightly brown. Otherwise, leave them raw, but I prefer the flavour when toasted!

Place the oats, almonds and dates in a bowl. Meanwhile warm the honey and peanut butter in a saucepan over a low heat. Pour over the oat mixture.

Mix well. I find using your hands bring the mixture together quicker!

Transfer to a small square tin about 8"x8" that has been lined with greaseproof paper or cling film. Press down well.

Cover the top with greaseproof paper or cling film.

Put in fridge for about 20 minutes to harden.

Remove from tin and cut into bars.

Store in an airtight container.
