Gisueppi Crupi was in the kitchen making this delicious Italian dish.
Serves 6
Ingredients
• 500g veal CUT IN THIN SLICES
• 1 cup breadcrumbs
• ¼ cup PARMIGIANO,grated
• 2 tbs pinenuts, toasted
• 5-6 tbs garlic
• CHOPPED PARSLEY
• olive oil
Method
1. Combine breadcrumbs, CHEESE, GARLIC, PARSLEY and olive oil
2. Slice VEAL into 18 pieces and slightly flatten
3. Place breadcrumb mix 1/3 of the way into each piece then roll up.
4. Skewer 3 rolls onto each skewer,
5. Oil the rolls, season and place onto a baking tray, baking for approx. 8-10 minutes at 210 0C.
6. ADD WINE DURING THE COOKING
ALTERNATIVES: USE CHCKEN AND A STUFFING OF BLUE-CHEESE AND WALNUTS
