Penne Puttanesca

Ingredients

  • 400g Penne pasta
  • 60mls olive oil
  • 1 clove garlic
  • 2 salted anchovies
  • 2 pinches chilli flakes
  • 1 table spoon capes
  • 12 black olives, stones removed and chopped
  • 1 tin good quality chopped tomatoes
  • 50g grated parmesan

Method

  1. Blanch the pasta in lots of boiling salted water for 8 to 10 minutes until al dente
  2. Put a large heavy based on a medium to high heat. Add the olive oil, now add the garlic and cook for 2 minutes with no colour
  3. Add the chili and anchovies
  4. Add the tinned tomatoes
  5. Cook the sauce out for 7-8 minutes while the pasta is cooking
  6. Add the olives and lots of black pepper.
  7. Add the cooked pasta and toss through
  8. Serve in a warm bowl with the grated parmesan
  9. I also like to drizzle with some extra virgin olive oil
