Soy Rice Noodles with Beef & Onions (Beef Ho Fun)
Serves 1–2 | Quick wok stir-fry
Ingredients
Beef marinade
• 140 g fillet beef, thinly sliced against the grain
• 1 tsp light soy sauce
• 1 tsp Shaoxing rice wine
• 1 tsp potato starch
• 1 tbsp water
• 1 tsp cooking oil
Stir-fry
• 450 g fresh sa-ho fun (wide rice noodles)
• 2 tbsp cooking oil
• ¼ onion, thinly sliced
• 60 g beansprouts
• 3 scallions (spring onions), cut into 4–5 cm lengths
• 1 tbsp light soy sauce
• 1 tbsp dark soy sauce
Optional heat & flavour
• 1–2 tsp East by Kwanghi Black Garlic Rayu
(available in Tesco Ireland)
Method
1. Marinate the beef
Place the sliced fillet beef in a bowl.
Add light soy, Shaoxing wine, potato starch, water and sugar.
Mix well, coat with 1 tsp oil and rest for 15 minutes.
2. Prepare the noodles
Gently separate the fresh rice noodles with your hands into long strands.
3. Cook the beef
Heat a wok until very hot.
Add 2 tbsp oil, then the beef.
Stir-fry for 30–40 seconds, just until lightly coloured.
Remove and set aside.
4. Stir-fry the noodles
Add the rice noodles to the same wok.
Gently lift and toss.
When they start to soften, add onion and beansprouts.
Cook for 30 seconds.
5. Finish
Return the beef to the wok.
Add scallions, light soy and dark soy.
Toss everything together for another 30 seconds.
Finish with Black Garlic Rayu if using.
