Crispy, festive, and perfect for the holidays! These Christmas-tree-shaped puff pastry bites are filled with a spiced potato and pea mixture, folded into trees, and held together with skewers for that perfect presentation.

Filling
3 large potatoes, boiled & mashed
½ cup peas
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp grated ginger
1 tsp cumin seeds
1 tsp garam masala
1 tsp curry powder
½ tsp chilli flakes (optional)
Salt to taste
1 tbsp oil
Handful fresh coriander, chopped
Squeeze of lemon
Pastry
1–2 sheets ready-rolled puff pastry
1–2 tbsp milk or beaten egg (for brushing)
Wooden skewers
Instructions
1. Make the Filling
Heat oil in a pan and add cumin seeds.
Add onion, garlic, and ginger, sauté until soft.
Add peas and spices, cook 2–3 minutes.
Add mashed potatoes, coriander, lemon, and salt; mix well.
Allow filling to cool completely.
2. Assemble the Christmas Trees
Roll out one sheet of puff pastry and place it on a baking sheet.
Spread an even layer of the potato filling over the pastry, leaving a small border around the edges.
Place a second puff pastry sheet on top and press gently.
Cut the layered pastry into long strips (about 2–3 cm wide).
Take one strip and fold it in a zig-zag pattern to create a Christmas tree shape:
Fold up to the left, then right, alternating until you reach the top.
Carefully insert a wooden skewer from the bottom through the center to hold the tree shape in place.
Brush the top of each tree with milk or beaten egg for a golden finish.
3. Bake
Preheat oven to 200°C / 392°F.
Bake the trees for 15–20 minutes, or until golden brown and puffed.
4. Serve
Serve warm with your favourite dips: mint yogurt, tamarind, sweet chili, or cranberry chutney for a festive touch.
