Chicken with Mustard Apple Cream
Makes 4 portions
Takes 30 minutes
This dish can also be done with pork medallions or chops.
Ingredients:
• 4 chicken breasts
• 1 white onion, sliced
• A knob of butter
• 100ml Irish cider
• 1 tart apple, wedges with skins
• 3 tsp Mustard, Dijon or wholegrain
• 400ml veg/chicken stock
• Sea salt & Pepper
• Thyme
• 50ml Cream
Method:
- Cut the chicken in half lengthwise.
- Heat some olive oil in a large pan over a medium heat.
- Season the fillet pieces and place them in the untill to brown, about 2 minutes on each side.
- Once browned, remove the chicken and place in a bowl.
- In the same pan, reduce the heat, add the butter, and soften the onions for 6-8 minutes.
- Pour in some white wine or cider and allow to reduce by at least half.
- Now add the apple wedges, mustard, stock, salt & pepper & thyme.
- Add the chicken, & any juices it has created, back into the pan.
- Pour in the cream, allow it to come up to a boil, reduce to a simmer and cook for 10 minutes.
- I adore serving mine with creamy butter mash and some bacon sprouts.
